THE WINERY

Our Tuscan-inspired modern cellar is situated in the heart of the beautiful Paarl winelands, Western Cape, South Africa. The first 15 hectares of vines were planted in 2016 and are meticulously managed to produce a low crop of consistent ultra-premium quality grapes.

The energy-efficient, state-of-the-art cellar features technologically advanced grape sorting and temperature control systems. The cellar was designed to enable minimal intervention winemaking, making optimal use of gravity flow and reducing the need for pumping and unnecessary handling of our pristine fruit.  

Our advanced cooling and heating systems allow the winemaker to control the rate of fermentation and extraction very accurately, which enables us to capture and extract complex, well-defined  flavours and luxurious texture in our wines.  Pin-point computerised humidity control in our barrel maturation cellar reduces the evaporation of wine from the barrels and enhances quality, reducing the need for pumping.

Winemaking at Baccõ is an art

Winemaking at Baccō is an art, where tradition is revered but enhanced by the use of cutting-edge innovation and modern technology.

It is our never-ending pursuit of perfection, to capture in every glass a story of a specific site and vintage. Expect interesting, age-worthy wines made for enjoyment.

Prelude
Range

These accessible wines offer the perfect starting point to explore the Baccō brand.

Made using minimal intervention, they are marked by true varietal and site expression. 

Rosé

This dry Rosé has an alluring onion skin, faint pink colour with delicate strawberry and sour cherry flavours making an inviting impression on the nose and palate. Further layers of citrus give this wine a lingering fresh finish.

VERMENTINO

This Italian cultivar is very rare as a varietal wine in South Africa. The maiden vintage of the Prelude Vermentino is an elegant wine that has good length and a dry finish. Delicately oaked, it features aromas of lime, pear and green apple followed by a detailed citrus profile on the palate.

SYRAH

The deep black-red colour of this wine gives a hint of its intensity and concentration. It is a vivid expression of the grape variety with mineral and mocha notes on the nose, followed by blackcurrant and other dark fruit flavours on the palate.

RED
BLEND

This Bordeaux-style blend exhibits a striking deep purple colour with abundant aromas of sweet cassis, chocolate and red berry preserve. Well integrated oak and supple tannins bring warmth and depth to this medium-bodied wine.

BACCŌ ESTATE
Range

The Baccō range represents our finest pockets and batches of fruit in a particular vintage.
Made in limited quantities, these wines are layered and complex – the hallmark of a patient approach in the vineyard and cellar.

CHARDONNAY

This inaugural vintage from our block planted in 2019. This Chardonnay displays an intricate spectrum of flavours from spiced tropical fruit and flint on the nose, to buttery pastry and preserved lemon on the palate, tied together by a lingering creamy mouthfeel.

VERMENTINO

This Italian cultivar is a rare find in South Africa, but it’s certainly a wine that exudes the flair of our Tuscan heritage. Exotic aromas and tastes abound from daffodil and sea spray to stone fruit and mineral inflections. A soft touch of oak adds complexity.

ROSÉ

This elegant rosé is light in colour, but substantial in taste and presence. It features an inviting range of flavours from luscious strawberry and peach, to refreshing rose water and cherry tomato. Equally suited to pairing with fine dining, or everyday sipping.

RED
BLEND

Our flagship red blend from selected varieties is only produced in vintages of exceptional quality. This refined wine is richly flavoured with cedar and vanilla notes upfront, followed by cherry, plum and umami notes. The mouthfeel is textured, with a bright acidity and integrated tannins.

SAUVIGNON
MALBEC

Our flagship blend is comprised of 72% Cabernet Sauvignon and 28% Malbec. Sweet nettle, blackcurrant and cassis feature on the nose and persist onto the palate along with subtle savoury and mineral notes.

Only 3 000 numbered bottles of this exclusive wine was crafted, and after a patient winemaking process which included 22 months in 225L new oak barrels and 18 months bottle maturation, it truly represents our ethos that time is the ultimate luxury.
